Peal the eggs and cut them in half lengthwise.

Take the yolk out of the eggs and mash it. Mix it with the cream and the blue cheese. Add extra cream for a soft mixture if necessary. Season with pepper.

Put the mixture in a piping bag and stuff the eggs with it. Sprinkle the chopped walnuts on top. Finish with a piece of cheese and some chive.

Ingredients (4 persons)

  • 4 boiled eggs
  • 1 tablespoon chive
  • 1 tablespoon parsley
  • 1 pinch of cayenne pepper
  • 1 tablespoon mayonnaise
  • 1 head of little gem
  • 2 tablespoons blue cheese
  • 1 to 2 tablespoons cream
  • 1 tablespoon chopped walnuts
